'Quin-tots' - Quinoa Tater Tots


Here's another excellent gluten free, dairy free, nut free and kid friendly recipe!
yields: 24 tots in a mini muffin pan
    2 cups cooked quinoa
    2 large eggs
    ½ cup sweet corn kernels
    1 cup shredded carrot
      1/4 cup mini peppers or whatever veggie you and/or your kiddo will eat, diced
    1/2 cup almond cheese
    2 Tbs garbanzo & fava flour
    salt to taste
     freshly ground pepper to taste
1. Preheat oven to 400 degrees.
2. Mix together quinoa, peppers, corn, carrot, egg, almond cheese, garbanzo & fava flour, salt and pepper.
3. Distribute mixture into a greased mini muffin tin, filling each cup to the top, and pat down.
4. Bake for 15-20 minutes.
